I have been making this dish for at least the last twenty years, when my girls were young they used to ask me to make this at least once a week. I did anything to help them enjoy fresh vegetables. So for Tina, Erica and Jamie here is one of their favorite sides. Enjoy!
Make sure when you are selecting your sprouts that they are tight and bright green with out any spots on them. You will want about 2 lbs.
Ingredients:
2 Lbs fresh Brussels sprouts.
1 hard cooked egg
3 TBL butter
2 TBL parsley chopped
1/4 C fine dry bread crumbs
Directions
Trim stems and cut an X in the bottom of the sprout
In a covered pan cook sprouts in a small amount of salted water until tender, about 6 to 10 minutes.
Drain sprouts and keep warm until you are going to serve them.
To make Polonaise take the egg and dice up. In a pan melt butter and add bread crumbs and stir for about 2 minutes, then add egg.
Heat till warm and pour over sprouts and then add parsley serve.
