Veal and Lemon SaltimboccaThis is a very eligant but simple dish to make in a short peoid of time. I pounded the veal scallopini down a bit and reduced the cooking time. Lemons must be sliced paper thin. Everyone was amazed by the dish and had no idea how simple it really was. I was concerned about the cream but it blended in very well with all of the other ingredients.
